Hi Everyone! I would like to invite everyone to post a favorite, healthy recipe here. Please include as a minimum the serving size, protein, carbs and fats!!! I look forward to all the input!!

Paella

I looove paella...there's tons of recipes for a paella so its a very easy, delicoso recipe.

Heres a basic one...

1/2 lb. shrimp, cleaned (chicken can also be used)
2 garlic cloves, crushed
2 tbsp. butter or margarine
1 tbsp. cornstarch
1 1/4 c. chicken broth
1 can (14 1/2 oz.) chopped tomatoes with liquid
1/2 c. sliced pepperoni
1 pkg. (10 oz.) frozen peas, thawed
1/4 tsp. cayenne pepper
1 1/2 c. dry minute rice



Directions:

Saute shrimp and garlic in butter until shrimp are pink approx. 2 minutes. Stir in cornstarch, cook 1 minute. Add broth, tomatoes, pepperoni, peas and cayenne pepper. Bring to a full boil, stirring occasionally. Stir in rice and saffron. Cover and remove from heat. Let stand 5 minutes. Fluff with fork.


Well yea there it is haha. You can make lots of kinds just experiment i guess that's what i do. You can make a salad paella too. Very healthy. Enjoy!

YAY! A success, so it was good idea William! I noticed the first recipe is already in the new post!
coincidentally, I have just cooked up some home made meat balls put together with lean minced steak cooking out all the fat content then put together with a warm salsa style sauce of plump course chopped tomatoes and herbs served topped with mature cheddar cheese and a sprinkling of parmisan and a fresh leaf side salad and light dressing!
YUMM lol!

CHICKEN MARSALA RECIPE

Wine, lemons, and mushrooms flavor this chicken recipe the lower salt and lower fat way.

1/8 tsp black pepper
1/4 tsp salt
1/4 C flour
4 chicken breasts, boned, skinless (5 ounces)
1 Tbsp olive oil
1/2 C Marsala wine
1/2 C chicken stock, skim fat from top
1/2 lemon fresh lemon juice
1/2 C sliced mushrooms
1 Tbsp fresh parsley, chopped


1.Mix together pepper, salt, and flour. Coat chicken with seasoned flour.
2.In a heavy-bottomed skillet, heat oil. Place chicken breasts in skillet and brown on both sides. Then remove chicken from skillet and set aside.
3.To the skillet, add wine and stir until the wine is heated. Add juice, stock, and mushrooms. Stir to toss, reduce heat, and cook for about 10 minutes until the sauce is partially reduced.
4.Return browned chicken breasts to skillet. Spoon sauce over the chicken.
5.Cover and cook for about 5-10 minutes or until chicken is done.
6.Serve sauce over chicken. Garnish with chopped parsley.

Yield: 4 servings--Serving Size: 1 chicken breast with 1/3 cup sauce

VEGETABLE SPAGHETTI

This lively vegetarian pasta dish contains no added fat or oil, is low in cholesterol, and is good hot or cold.

2 C small yellow onions, cut in eighths
2 C chopped, peeled, fresh, ripe tomatoes (about 1 lb)
2 C thinly sliced yellow and green squash (about 1 lb)
11/2 C cut fresh green beans (about 1/2 lb)
2/3 C water
2 Tbsp minced fresh parsley
1 clove garlic, minced
1/2 tsp chili powder
1/4 tsp salt
to taste black pepper
1 can (6 oz) tomato paste
1 lb uncooked spaghetti
1/2 C grated parmesan cheese

Combine first 10 ingredients in large saucepan; cook for 10 minutes, and then stir in tomato paste. Cover and cook gently, 15 minutes, stirring occasionally until vegetables are tender.

1.Cook spaghetti in unsalted water according to package directions.
2.Spoon sauce over drained hot spaghetti and sprinkle parmesan cheese over top.

Yield: 9 servings--Serving Size: 1 cup spaghetti and 3/4 cup sauce with vegetables
Each serving provides:

Saturated fat: 1 g
Cholesterol: 4 mg
Sodium: 173 mg

Larry you n me must have similar tastes in foods lol! When my first son was born I was involved in the fashion industry yet also had a small ecatering trailer that we used for events such as horse shows etc! My ex was a chef and I had worked to a fairly high level in qualifications ie: 706/3 city & guilds qualifications, but known of this makes up for a true feel and love of food! At that time I had loadsa time to make home made vegetable soups and blend them for the baby and stuff like that, it was real cool!
I still maintain an interesting diet for me and the kids but have to be a realist, so recipes like yours are similar to mine!

I recently commenced a group on behalf of surestart a voluntary organisation in the UK, the group is aimed at single fathers and to get them more involved with their kids, so I run a group that shows them skills in the kitchen and their kids can get involved too! Much more constructive than Saturday contact with the kids and taking them to MacDonalds lol!
