The term began being used in the Middle Ages when the bubonic plague was
ravaging Europe. In the final stages of the disease, the afflicted persons had
fits of sneezing.
So, when others heard some1's nose blowing & spraying, they knew the person was
probably about to die...
Thus, the farewell wish of God Bless You/ Gesundheit was spoken. but true.

I also heard that people would say it not only because they knew you were
probably about to die, but for spiritual reasons as well. People (especially
native americans) would say "God bless you" because they believed that your
spirt could escape your body through a sneeze.
