Retouching, you may be confused here. You may be referring to a term called Depth of Field, but depth of Focus also deals with photography.

Depth of field can be thought of as the area in a picture that remains 'acceptably sharp'. Photos with a shallow DOF (depth of field) such as macro shots have very small portions of the subject that are in focus. A shallow DOF is demonstrated in many pictures where the subject or model is in focus and the background is blurry.

A large DOF is the opposite, objects ranging from close up all the way to infinity are in focus, and this is achieved with suitably large f-stops / small apertures. An example of large DOF is in landscape pictures of grass and mountains in the background.

Depth of FOCUS refers to the distance between the film 'plane' if you will, and the optical element. I'm pretty sure you are more concerned with Depth of Field.
